The next time you're slicing a mushroom, trying cutting it perpendicular to the stalk instead of across the cap.

If you pull out the stalk first, then it's really rather difficult to do that.

Oh really! I have to spell out everything to you people.
If you're right handed, hold the mushroom by the stalk on the cutting surface in your left hand. Slice the top off the cap. Keep slicing until the cap is all sliced up. Throw stalk away. See? Nifty little circles of white mushroom flesh accompanied by alien mushroom rings with the gills on the inside.
